I prefer to remove the skin from the filet. Cutting them into serving-size portions will make them easier to handle on the grill. Preheat your grill if it is gas; add wood chips for smoke flavor if desired. Cook the fish over a medium to high heat for about 5 min on one side, then turn over and cook until done. Do not keep turning over, as the fish will dry out. When you can insert a fork without resistance, take the fish off the grill, as it will keep cooking after you remove it from the heat. Having the center a little moist is best, but some people prefer their fish a little drier.
With all of my recipes I recommend using the freshest fish you can get, and always wild-caught as opposed to farm-raised.
As with cooking any fish, the most important thing to remember is: Don't over-cook! |
Mayo & Mustard

This recipe also works well with halibut.

ingredients
- 4 pieces fish, about 6 oz each
- 3 tbsp mayonnaise
- 1 tbsp spicy brown mustard
- 1 tbsp olive oil
- garlic
- Mrs Dash Original
- seasoned salt

preparation
- Pat fish dry with paper towel.
- Mix together mayonnaise, mustard, and olive oil.
- With a pastry brush, cover the entire fish piece with the mixture.
- Sprinkle fish with garlic, Mrs. Dash, and seasoned salt, to taste.
- Cook over a medium to high heat for about 5 min on one side, then turn over and cook until done.

- 1/4 tsp garlic
- 1/4 tsp ginger

- With a pastry brush, paint the entire fish piece; let stand for about ½ hour before grilling.
- Cook over a medium to high heat for about 5 minutes on one side, then turn over and cook until done.

Butter & Dill

Try substituting Italian seasoning for the dill for a nice change.
